San Pedro Sideral 2021, Cachapoal Valley, D.O., Chile: Sideral 2021 is a dry, medium-plus-bodied red wine blend of 73% Cabernet Sauvignon, 11% Syrah, 9% Petit Verdot, 9% Carmenère, 4% Petit Verdot and 3% Cabernet Franc grapes sourced from the Cachapoal Valley wine region. The wine was aged for 16 months in oak barrels (20% new) as well as in 2,000-litre casks. From a cool vintage, the wine is fresh and generous on the palate with bright red berry fruit, cherry, fine herbs and tomato leaf aromas and flavours with brilliant acidity on the palate. Tannins are fine-grained and pleasantly chewy. A very elegant Chilean red wine that will continue to evolve in bottle for the next five years. Food pairings: bison burgers, roast duck, hard cheeses.
