Mocha and dark chocolate form oak aging. Smooth and full-bodied. Pair with grilled pork chops. OTHER: Black berry, smoky, tobacco, earthy, peppery, cocoa, minty nose with black olive, vanilla aromas and bits of red liquorice and cedar. Round, fresh, juicy palate with smooth, light tannins. Cassis, vanilla, coconut, black berry, earthy, resin, cedar, tobacco and chocolate flavours. Good fruit and finesse in a more forward style but should keep for a few years. Steak anyone? Score - 89 (Stuart Tobe, gismondionwine.com, Nov. 12, 2015).

Cabernet Sauvignon food pairings: rustic venison stew, slow-roasted beef brisket, rib roast.

From California's Sonoma County is this 'Fortress' (2012) of a Cabernet Sauvignon wine. Twice as large as Napa in size, Sonoma County has a varied terroir and makes half the amount of wine of Napa, but is turning out some very interesting Cabernet Sauvignon. - Community Wine Reviews
