Hands down: Cave Spring is the Riesling Master of Niagara. Gorgeous Riesling from Niagara. Petrol, wet stone love. Racy acidity for seafood and anything that pleases your palate.

This almost clear Riesling has citrus, tropical fruit and orange blossom aromas. It is dry on the palate with flavours of lemon, clementine, and floral notes and a touch of minerality and vibrant acidity. Lovely Riesling!

Recommended wine-food pairing: poached salmon, spicy sausage pizza, and Thai food.

Cave Spring is known for its clean and crisp white wines from the Niagara Escarpment wine region in Ontario. But this Riesling, CSV (2015) is a classic with petrol, flint, white flowers and lemon cured. Fantastic acidity with great balance and longevity. Drink now with a pork roast. But, the wine is young right now and could cellar for five years to further develop and marry all of those flavours. It certainly has the fruit and acidity to sustain it. - Community Wine Reviews
